Chef Thomas Bille has been collecting accolades since reopening his restaurant, Belly of the Beast, at 5200 Farm to Market in Spring, Texas — including our inclusion in our list of 2023’s best new restaurants. Earlier this year, he was a James Beard Award Best Chef Texas semifinalist. Now, the September/October 2024 issue of restaurant industry magazine Plate has listed Bille among its “Chefs to Watch”.
