Remember those bean sprouts and alfalfa sprouts you used to grow, stuffed into a mason jar with some wet napkins in the bottom or between two damp paper towels on a tray on the kitchen cabinet? Well, those are not microgreens. Microgreens are densely sown vegetable and herb seeds that have been allowed to grow beyond the sprout stage to produce leaves (greens) but are not mature plants. Microgreens are considered a nutrient, dense superfood that can be grown and harvested indoors all year long. You do not need an outdoor space or a dedicated garden to grow them. These are fun for children and require extraordinarily little equipment and few supplies to grow successfully.
